Banana Choc Chip Muffins

Soft, naturally sweet, and made for little hands. Easy to make and they freeze like a dream, so lunchtime's sorted for the week ahead.

Ingredients

Method

  1. Heat your oven to 180°C and grease a 12-hole muffin tin (or line it).
  2. In a large bowl, mix the flour, flaxseed, cinnamon, baking powder, baking soda, and salt.
  3. In a second bowl, mash the bananas well, then stir in the eggs, milk, maple syrup, nut or seed butter, and vanilla until smooth.
  4. Pour the wet into the dry and fold gently until just combined. A few lumps are fine - don't overmix.
  5. Fold through the chocolate chips.
  6. Spoon into the tin, about ¼ cup per muffin. Scatter a few extra chips on top.
  7. Bake for 18-20 minutes, until golden and a skewer comes out clean.
  8. Cool in the tin for 5 minutes, then move to a wire rack.

Nut-freeSwap the nut butter for sunflower seed butter, tahini, or plain butter - same soft crumb, school-safe.
SweetnessThe browner the banana, the sweeter the muffin.
Gluten-freeSwap the wholemeal flour for buckwheat.
